Soki Soba, the Quintessential Okinawan Table Fare

Other than rice, Soki Soba is probably found on the Okinawan table more than any other food.  There is a reason for that.  Soki Soba is made from the boneless section of pork spareribs with the cartilage still attached.  The soup is slowly cooked with the addition of Kombu (a specific type of seaweed), Daikon ( a particular type of radish, awamori (a distilled rice sake which is indigenous to Okinawa), and soy sauce.
Even if the ingredients don't sound all that appealing to you singularly, in combination they are like a taste of happiness and love upon your palate.  The soup is served over soba noodles, and it comes to your table steaming hot and inviting.
Chiruguwa is the name of our favorite Soba house, and today it was our pleasure to taste Okinawa like it should be enjoyed.  Served up with a smile.  My granddaughter entertained a table next to ours filled with Japanese school girls.  She also had the waitress laughing when she spoke Japanese to her.  She's only two years old, but she has really assimilated into the Japanese culture.
